I have no idea why I was thinking this
today but why is it "The Twelve Days of Christmas?" Christmas is only one day as far as I know. So would the first day be on the 25th or would the twelfth day? I'm confused.

The 12 Days of Christmas refers to the 12 days between Christmas Day (Dec. 25) and Epiphany (Jan. 5). Epiphany is the day when the Magi were thought to have brought the gifts to the Christ Child.
They really should explain this somewhere in the song. I guess it doesn't really rhyme well though.
